Cook Time: 45 minutes minutes. Total Time: 1 hour hour. Servings: 6. Calories: kcal. Author: Alison Andrews. Cook Mode Prevent your screen from going dark. Instructions Add sesame oil and chopped onions to a pot on medium heat and sauté until the onions are softened.

Add crushed garlic, minced ginger and red curry paste and sauté for a minute to lightly toast the spices. Add sweet potato and carrots and toss with the onions and spices.

Add vegetable stock, soy sauce and coconut milk and stir together. Bring to a boil and then reduce the heat, cover the pot and leave it to simmer checking regularly and stirring until the veggies are soft and cooked about 30 minutes.

Turn off the heat and use an immersion blender to blend the soup directly in the pot. If you don't have an immersion blender then allow the soup to cool for a few minutes before transferring it in stages to your blender jug and blend it.

When it's all blended move it back to the pot. Stir in coconut sugar and then add salt and pepper to taste. Serve topped with a swirl of coconut milk, fresh cilantro and a sprinkle of red pepper flakes and black sesame seeds.

Some toasted bread on the side for dipping is also a wonderful idea. Notes Sesame oil — can be replaced with a different oil if you prefer. Thai red curry paste — check the label for vegan friendliness as some brands are not vegan. Sweet potatoes — the best sweet potatoes to use are the ones that have the orange flesh inside.

They usually have a reddish or orange peel. Coconut milk — should be canned, full fat and unsweetened. You can also use canned coconut cream unsweetened for an even richer soup. Coconut sugar — this balances the spicy flavors perfectly.

You can also use brown sugar. This is easily fixed by generously adding salt and pepper. Storing and Freezing : Keep your leftover Thai sweet potato soup in a covered container in the fridge where it will stay good for days.

I made this today with a few changes. I also used a garlic press on the garlic and grated fresh ginger on top of it and added as indicated in recipe.

Changed the spices a bit by adding garam masala, cardamom, ground coriander and paprika. After reading some of the other comments decided to try for a light curry flavor so the oregano was omitted. Put the sweet potato through a ricer and added to the broth mixture.

Super delicious for a cold winter day! While I have never tested it, I think it should freeze nicely. Cool completely and store in air-tight freezer container or bag for up to 3 months.

I would recommend holding off on the 2 tsp of salt and add at the end for your taste preference…absolutely love it~. We use reduced sodium broth so that definitely makes a difference when adding salt at the end. I love the bacon grease suggestion!

I had the same question about your coconut coleslaw recipe, actually. I made it several times already using canned milk, and then noticed that in a photo you have a carton of coconut milk.

Its so amazing that there are so many different recipes! I made one similar last night for dinner, except I used cream cheese instead of coconut milk and butternut squash instead of sweet potatoes.

It was very yummy to my surprise! Now I want to try your butternut squash cream cheese soup! I just love cream soups.

Puree soup until smooth. I accomplished this in two batches in my Blender. Return soup to pot and stir in 1 cup coconut milk, or add it to reach desired consistency then season with more salt and pepper to taste if desired. Serve in warm bowls.

Sprinkle the tops with bacon and garnish with chopped parsley, if using. Notes Great tip from my husband Vadim: To partially cover with lid, place a wooden mixing spoon across one side of your pot and place your lid over it. This way the lid won't hang over the edge and drip onto the stove and the lid is less likely to shut closed unexpectedly and cause your pot to boil over.

I made it several times already using canned milk, and then noticed that in a photo you have a carton of coconut milk. Thanks in advance for your reply! Canned coconut milk is a little bit richer so you might get better flavor with the canned version.

Puree soup until smooth. I accomplished this in two batches in my Blender. Return soup to pot and stir in 1 cup coconut milk, or add it to reach desired consistency then season with more salt and pepper to taste if desired.

Serve in warm bowls. Sprinkle the tops with bacon and garnish with chopped parsley, if using. Notes Great tip from my husband Vadim: To partially cover with lid, place a wooden mixing spoon across one side of your pot and place your lid over it.

This way the lid won't hang over the edge and drip onto the stove and the lid is less likely to shut closed unexpectedly and cause your pot to boil over. Sweet potato soup -

Add the cream and milk to the soup. Heat on medium until the soup is heated through. Add salt and pepper to taste. Sprinkle with more black pepper and swirl some water-thinned sour cream or plain yogurt over the soup to serve.

I made it with two cups full fat coconut milk and one cup low salt vegetable stock. I left out the salt, chickpeas and cayenne pepper and blended it for my 7month old who LOVED it!

I used a can of full fat coconut milk and filled the can again with water for the liquid. Oh and as another person stated, my chickpeas also came out crunchy for the first time!
